Recipe: Spicy Lentil Soup!

ingredients
250 G red lentils
3 X carrot (diced)
1 X leek (chopped)
3 X celery stalk (chopped)
2 X onion (diced)
1 X sweet potato (grated)
2 X bay leave
1 CUP parsley
2 TBSP ground cumin
2 TBSP ground coriander
2 TBSP red chile flakes
2 TBSP butter
2 CUP vegetable stock
1 CUP cooked rice
1/2 CUP wine
directions
-saute carrot, leek, onion and celery in butter
-deglaze pan with vegetable stock
-add bay leave, red lentils, sweet potato, cumin, coriander, red chile flakes and wine
-simmer until the lentils are done, add wine and parsley
-blend until smooth, serve with rice and garnish with parsley leaves
