Recipe: Carnitas!

Taco De Carnitas, Guacamole, Pico De Gallo
Slow Cooked Pork Meat Taco, Avocado Mash, Tomato/Chile/Onion/Cilantro Mix
carnitas ingredients
2 KG pork shoulder (4.4 lbs)
8 X tortilla
1 X zest of one orange
6 X garlic clove (quartered)
1 X big onion (diced)
1 1/2 X cinnamon stick
2 X bay leaves
8 TBSP ground cheese
2 TBSP dried red chile (roasted, ground with seeds)
1 1/2 TSP dried oregano
1 1/2 TSP salt (to taste)
1/4 TSP cloves (roasted)
guacamole ingredients
2 X avocado
1 TSP garlic powder
1 TSP onion powder
1 TSP salt
1 TSP pepper
4 TBSP line juice
pico de gallo ingredients
1 X red onion (sliced)
2 X tomatoes (diced)
1 X green chile (seeded, deveined, diced)
1 TSP balsamic vinegar
1 TSP olive oil
1 TSP salt & pepper
1/4 CUP cilantro (chopped)
directions
-trim excessive fat off pork, cube meat
-place all carnitas ingredients (except the tortilla and cheese) in a slow cooker
-slow cook the pork for 8 hours on low setting
-discard cooking liquid and pull the pork, leave in slow cooker to keep it warm
-core avocado, spoon out its flesh, mash with remaining guacamole ingredients
-combine pico de gallo ingredients
-warm or make tortillas
